3/4" thick, center cut, trimmed quality steak with a lot of marbling. The Denver Steak is a relatively new cut (introduced in 2009), and it's very juicy and comes from the most heavily marbled muscle in the body. It is also the 4th most tender cut, behind the tenderloin, flat iron, and the rib eye cap. It can be grilled, sautéed, or marinated for extra flavor.
